Sponge cake with whipped cream and strawberries

 6 tbsp wheat flour
 6 tbsp sugar
 6 eggs
 1 tbsp lemon zest
 2 tbsp butter
 200 ml cream
 250 g organic strawberries

Preheat oven to 180° C.

Place the two eggs, two yolks, lemon zest and sugar in an electric mixer and whisk on high speed for 12–15 minutes or until pale. In a separate bowl beat the four egg whites with the remaining sugar (3 tbsp).

Add to the yolk preparation the sifted flour while wrapping.

When the flour is well wrapped add the egg whites. Wrap the egg whites in the mixture without removing too much air.

Put the cake batter into a round pan topped with butter and baking paper. Bake for 30 minutes at 190ºC. Check the sponge cake with a toothpick, remove and let cool.

When the cake is cold, whip the cream with 2 to 3 spoons of sugar. Put the whipped cream in the freezer 30 minutes.

Decorate the cake with whipped cream and strawberries.
